Description
Soba noodles are mainly served in two ways: hot in soup, or served cold on a screen (usually made of bamboo) with a dipping sauce and condiments creating a great summer dish. For cooking: Bring water to a boil. Put soba into the boiling water. As soon as the noodles become soft, drain well and rinse with cold water. Put soba on top of a bamboo screen and serve with diluted soba sauce, chopped green onion or grated radish (daikon), and wasabi. For Cold soba: mix the condiments into the dipping sauce, then lift up the noodle completely from the bamboo screen with chopsticks, partly dipped them into the sauce, and slurp.
